Restaurante Anamaya cocina fusión India es pequeño, cómodo, se pueden contar unas 10 mesas, cada una para cuatro personas. su decoración incluye coloridas lámparas, mesas con mándalas que son pintadas por los comensales mientras esperas su orden.

La carta no es extensa, pero si variada y con opciones para los veganos. En ellas son protagonistas los Rotis, panes delgados que son hechos con ghee, harina (en algunos casos integral), sin levadura y que se convierten en el complemento perfecto para las diferentes preparaciones que hacen en este restaurante del barrio San Fernando, en Cali.

En el menú hay un poco de todo, para quienes quieren comenzar a conocer sobre esta propuesta ofrecen la cocina fusión y para los arriesgados a sabores marcados por las especias están los platos indios como el pollo  tikka massala.

El nivel de picante, característico de la cocina india, lo manejan de manera moderada, para los seguidores hay la opción de ponerlo de manera adicional.

María Fernanda Gómez, ingeniera industrial; su socia una sicóloga y su esposo un coach holístico, se unieron para entregar una propuesta diferente.

Escogieron el nombre de Anamaya porque en sánscrito significa salud espiritual y comenzaron a darle rienda a un sueño, que se construye alrededor de la buena mesa.

Con su propuesta gastronómica hacen una invitación a conocer otra cultura sin necesidad de usar un pasaporte. Dentro de su programación ofrecen algunos sábados en la noche espectáculo de danza india, así como la presencia de una artista del tatuaje en henna.

Probamos como entradas su sopa día y noche, de tomate y champiñones y el Roti humus con tres alternativas y una buena porción de trozos de Roti.

Como plato fuerte disfrutamos el pollo al estilo indio marcados por curry, leche de coco y jengibre.  Así como un Roti Lomo Grillé acompañado de cebollas caramelizadas, pimentón morrón y notas de queso azul.

Las porciones, son adecuadas para una sola persona, si van varios podría ser una buena alternativa pedir diferentes opciones y disfrutar de esta apuesta gastronómica.

Sus tés tienen protagonismo. Para refrescar están las infusiones frías con nombres como ‘Diviértete’ hecha a base de té, frutos tropicales y soda o la limonada intensa “una infusión de frutos salvajes conformados por acaí, arazá, flores de Jamaica, entre otros”, afirma María Fernanda Gómez.

Lo que debes saber

De los platos típicos de la cocina india conservan ingredientes como las especias, incluyen en sus preparaciones yogurt, leche de coco que dan un espeso perfecto para mojar los rotis.

La presencia del curry y las demás especias otorgan a cada plato personalidad. La mayoría de ellos van acompañados por rotis, los otros por arroz basmati o verduras se convierten en una fiesta para el paladar.

Cuando visites Anamaya Restaurante, ten en cuenta que el roti será un aliado y funcionará como una cuchara. Y para cerrar el recorrido se recomienda beber un té caliente que facilita la digestión.

Las entradas tienen un costo que oscila entre los 7 y 10 mil pesos. Los platos fuertes entre los 16 y los 25 mil pesos.
